چکیده

Anomericformoftheproductsfremchitinase-catalyzedhydrolysis was analyzed by iH-NMR spectroscopy. When the chitinase from StreptenoTces griseus was added to the solution of substrate, Ai,AJ,IV,IV;IV-pentaacetylchitopentaitol, fi-anomer was first produced by the enzymatic hydrolysis, and then transformed to oc-anomer by mlltarotatioo. In contrast, the chitinase from Dioscorea qmpesita (yam) produced enly a-anomer, which was transformed to fi-anomer by mutarotation.
